Ok, I may be biased because Felix is my bias, but believe me when I say these are the best cookies I have ever had. And that is coming from someone who was raised in and around a literal bakery, family owned and run, of course.
Even though I grew up in a bakery, I am not one for making anything that involves touching dough. It is a texture thing. That is why I usually prefer Felix’s brownie recipe. It is less work and only requires one bowl, unlike his cookies.
This was my third attempt at making these cookies. The first time, I forgot to read the recipe properly and accidentally made cookies instead of the brownies my period induced craving was pushing me to make. I ended up with a huge square pan of chocolate cookie cake. It was delicious. I had added cocoa powder since the ingredients were missing what I thought was the main component for brownies, but it somehow worked out.
My second attempt was almost worse. Being lazy, I decided to use one bowl instead of two, which is probably where I went wrong. I made about ten small cookies on my baking pan, but to my dismay, they merged into one giant cookie sheet. Again, still delicious, just not exactly cookie shaped.
On my third and successful attempt, I used two mixing bowls and baked in three rounds using my small pan so I could finally have actual cookie shaped cookies.
Although my eight cookies turned out huge, they were so good. I got mixed reviews from my nieces. Some liked them, others did not, but I think it is because I mentioned the coffee ingredient, so they immediately assumed the cookies would taste bitter. The adults in my family, on the other hand, absolutely loved them just as much as I did. I used Don Francisco coffee grounds, and the flavor they added was amazing. It really brought out the chocolate chips in the best way.
